Better late than never How to make absinthe and not make yourself a felon:
1. Distillation requires a permit unless you live in New Zealand
2. Recent discoveries suggest that you can make authentic absinthe using maceration + 1 secret ingredient to get that all important louche.
PS I do not know what it is yet...
