I have never drank absinthe but it seems like it is supposed to taste like sour apple pucker after mixed with the sugar and water. I have heard countless websites say that it is bitter, but I have a wormwood plant and have made wormwood tea which is never bitter. You have to wait until the second year of the plant for it to not be bitter.

I love natural pressed apple and the tarter the better. I do not think that the sharpness of apple (the tartness I guess) is present in absinthe really. Can you tell us more about the wormwood plants that you grow, bgssss? That is Artemisia Absinthium?

PS. I mix vanilla extract with very sharp juices (like lemon or lime) it rounds the edges and creates a smoother drink. I don't like adding sugar to these juices and vanilla works a treat (bit pricey though)

Vanilla extract does that I agree. There is a big difference between vanilla extract and vanilla essence.
